Micronutrient deficiencies in soil are passed up through the food chain from bottom to top. Fertilizers may speed up plant growth, but this does not mean that plans are absorbing micronutrients faster. On the contrary, fruits and vegetables grown quickly may have less time to absorb nutrients from the soil. So, many crops end up being higher in water content than nutritional value. Plant scientists refer to this diminishing nutrient uptake as the “dilution effect.”
